But what they call crawfish are really lobsters, the Spiny Lobster, that is (some call it the Gulf Spiny Lobster or the Florida Spiny Lobster). There is a regulated crawfish season and in Jamaica, you can’t hoard crawfish…you’ve got to declare any frozen crawfish in your stores and use it up withing three weeks of the season’s close.
