The Louisiana red swamp crawfish were wisely brought to the northern California rice fields by the Yuba rice growers in the 1930s and 40s. They’re harvested, processed and shipped in the Cali area except those lucky enough to be eaten at the Crawfish & Catfish Festival hosted at the Yolo County Fairgrounds in Woodland, Ca. The exact title of the festival is Louisiana Sue’s Crawfish & Catfish Festival and it’s going to held Sept. 13-14.
The organizers will be “boiling, frying and putting the tasty crustaceans in jambalaya, po boys and serving them up with spicy boiled potatoes and corn.”
